Why Does Gimbap Remind Koreans of Picnics?

For many Koreans, gimbap brings back memories of school picnics.

My mom would wake up early to make gimbap. The pretty slices went into my lunchbox.

And the pieces at the ends?

We call them “꼬다리” (kkodari)!

Those little end pieces of a gimbap roll! And where did they go?

Straight into my mouth! Before the picnic even started. Haha!

But here’s something interesting. At the picnic, I’d look at my friends’ lunchboxes, and everyone’s gimbap was different!

Why?????

Gim + Bap. Is That Really All?

Just look at the name.

김 (gim) = Seaweed

밥 (bap) = Rice

Simple, right? But is gimbap really just seaweed and rice?

No, no, no!

It’s seaweed + rice + whatever you put inside!

Pickled radish, egg, cucumber, carrots, ham, tuna, kimchi, cheese… The list goes on!

Mix the ingredients differently, and you get a different gimbap.

Imagine 100 people making gimbap. You might get 100 different versions!

That’s why I call gimbap a food full of freedom!

Can You Crack the Gimbap Menu?

Walk into a gimbap shop in Korea. So many kinds of gimbap! Don’t panic!

Here’s a little secret.

The word before 김밥 (gimbap) often tells you the main ingredient!

Let’s see!

  • 참치김밥 (chamchi gimbap) → Tuna gimbap
  • 치즈김밥 (chijeu gimbap) → Cheese gimbap
  • 김치김밥 (kimchi gimbap) → Kimchi gimbap
  • 계란김밥 (gyeran gimbap) → Egg gimbap
  • 소고기김밥 (sogogi gimbap) → Beef gimbap
  • 야채김밥 (yachae gimbap) → Vegetable gimbap
  • 묵은지김밥 (mugeunji gimbap) → Aged kimchi gimbap
  • 진미채김밥 (jinmichae gimbap) → Seasoned dried squid gimbap

Oh! Here’s a funny one.

꼬마김밥 (kkoma gimbap)!

Does that mean there’s a little kid inside? Haha! Of course not!

Kkoma means little or small. It’s mini gimbap!

Even if you’ve never tried them, you can already guess what’s inside!

Of course, ingredients can vary from shop to shop. That’s part of the fun!

What Makes Gimbap Taste CRAZY Good?

Gimbap is already delicious on its own. But pair it with the right food?

BOOM! The flavor goes to another level! So, what’s the secret?

RAMYEON!!!!!

Ramyeon + Gimbap = 국룰 (gung-nul)!

국룰 is Korean slang for an unwritten rule everyone knows. This combo is a longtime classic at Korean snack shops (분식집, bunsikjip)!

Personally, I love soupy ramyeon + tuna gimbap!

And another favorite?

Tteokbokki + classic gimbap or mini gimbap!

Try dipping gimbap into that spicy tteokbokki sauce. So good!

One Roll? Two Rolls? Let’s Order!

In Korea, we usually order gimbap by the roll, using 줄 (jul).

한 줄 (han jul) → One roll

두 줄 (du jul) → Two rolls

That’s all you need to get started! Ready?

“사장님! 참치김밥 한 줄이요!”

Sajangnim! Chamchi gimbap han juriyo!

“One roll of tuna gimbap, please!”

Or how about two?

“사장님! 치즈김밥 두 줄이요!”

Sajangnim! Chijeu gimbap du juriyo!

“Two rolls of cheese gimbap, please!”

Easy, right? But wait…

Why han jul instead of il jul?

Hmm… Let’s save that mystery for another day. Haha!

What Would YOU Put in Your Gimbap?

Oh! One more thing! You can make gimbap at home, too!

Here’s what you need.

Gim (Seaweed): Make sure you get 김밥용 김 (gimbap gim) — seaweed sheets made for rolling gimbap!

Not those small, salty, oily seaweed snacks!

Rice: Seasoned with a little salt and sesame oil.

A bamboo rolling mat: Helpful, but optional!

Fillings: Whatever YOU want!

Now, let’s make some gimbap!

Place the gim on the rolling mat and spread the rice over it. Add whatever ingredients you like.

Roll it up, slice it, and you’re done!

Pretty easy, right? And here’s the best part.

YOU choose what goes inside!

Love tuna? Add more tuna! Love eggs? Pack it with eggs!
