Hey, Sikgu!
Wondering what “Sikgu” means? Find out here →
Today, we’re talking about samgyetang (삼계탕) — Korean ginseng chicken soup, served with a whole chicken right in your bowl!
And here’s the funny part: Koreans love eating this piping-hot soup in the middle of summer. Why? We’ll get to that.
But first, let’s play a little guessing game with the name.
Tang (탕)? That sounds like a soup.
Sam (삼)? Wait, doesn’t sam mean three in Korean? Three ingredients, maybe?
And gye (계)… what’s that?
Let’s crack the name, find out why Koreans call this a power-up meal, and see how to enjoy it like a local!
Samgyetang: The Name Gives It Away!
Here’s what those three syllables mean:
Read the Korean menu
삼계탕
Samgyetang
Korean ginseng chicken soup
삼
sam · ㅅ + ㅏ + ㅁ
계
gye · ㄱ + ㅖ
탕
tang · ㅌ + ㅏ + ㅇ
삼 (sam, 蔘) — ginseng, not the number three (三)!
계 (gye, 鷄) — chicken
탕 (tang, 湯) — soup
Read it together: sam-gye-tang
At the end of a syllable, ㅁ sounds like m, while ㅇ sounds like ng.

Aha! Now the name makes sense, right?
Samgyetang is made by stuffing a small chicken with ginseng, jujubes (red dates), glutinous rice (sticky rice), and garlic, then simmering it until tender.
And here’s the fun part.
The chicken stays whole! Instead of a few chopped-up pieces, you usually get a whole chicken in your own bubbling stone bowl. The rice inside cooks up soft and tender, too.

Think about it!
Ginseng, traditionally prized in Korea + protein-rich chicken + a rich broth simmered with all those ingredients!
Now you can see why Koreans think of samgyetang as boyangsik (보양식, nourishing food traditionally eaten to restore energy), can’t you?
Wait… Koreans Eat This HOT Soup in SUMMER?!
Why would anyone eat steaming-hot soup in the middle of summer?
In Korea, the answer is boknal (복날): three traditional hot-weather days — chobok (초복, first), jungbok (중복, middle), and malbok (말복, last).
There’s even a saying, iyeolchiyeol (이열치열, 以熱治熱): “Fight heat with heat!”
The idea is to enjoy a nourishing meal and power through the summer, sweat and all.
On boknal, popular samgyetang restaurants can have lines out the door.
Yes, Koreans line up in the heat… for more heat!
Chicken First? Rice First? Here’s How I Eat Samgyetang!
All right, your samgyetang has arrived!
It’s bubbling away in a hot stone bowl. Careful — that bowl is seriously hot!
Take a sip. A little mild for your taste?
No problem. You can add a little salt and pepper to the broth, or dip your chicken in a bit of salt.
Now, let’s eat!
There’s no single “right” way to eat samgyetang. Here are three ways to enjoy it:
| Your style | How to eat it |
|---|---|
| Chicken first | Enjoy the chicken first. Save the sticky rice and broth for later. |
| All together | Shred the chicken and eat it with the sticky rice and broth. |
| Hybrid (my personal favorite!) | Enjoy the legs, thighs, drumettes, and wings on their own. Shred the breast meat and mix it with the rice and broth. |
Me? I’m a hybrid!
I get to enjoy the chicken on its own and the tender rice soaked in that rich broth. Best of both worlds!
That’s how I usually eat mine. Now it’s your turn to find your own samgyetang style!

Wait — what about dakhanmari (닭한마리), literally “one whole chicken”?
Unlike samgyetang, it’s usually a shared chicken hot pot, often with potatoes, rice cakes, and dipping sauce.
You can even finish the meal with kalguksu (칼국수, knife-cut noodles)!
Similar chicken, very different experience. We’ll save the full story for another day.

Not so hard, right?
Say that at a samgyetang restaurant, and before long, you’ll have a bubbling bowl of chicken soup right in front of you!
Don’t let the heat scare you!
Sweat a little, eat well, and see why Koreans reach for samgyetang when summer turns up the heat.
